This product, which has been made since Roman times, forms part of a time-consolidated tradition. In the past, people living in rural areas used to make their own bread at home. When doing this, they would separate some of the dough and use it for making flat cakes called “coques”. They would then put products from their vegetable gardens on top of these pizza-like bases and cook them in the oven. With time, olive oil was added to the bread mass, giving rise to one of the most emblematic and exclusive products of the gastronomy of Lleida, the “coca de recapte”.
·Nutritional value: The fact that their main ingredients are a bread base, olive oil and various vegetables cooked with virgin olive oil means that these products are high in nutritional value. They also form part of the Mediterranean diet. The “coques de recapte” produced by the bakers’ guild of Lleida are made with natural ingredients: olive oil from Les Garrigues, flour and vegetables from the vegetable gardens of Lleida. They are then garnished with vegetables, meat and fish. All of these ingredients form part of the famous Mediterranean diet.
·Location: This type of savoury coca can be found throughout the Mediterranean arc, but it has its greatest tradition in the area around Lleida. In fact, each comarca (local district) has its own coca de recapte with its own specific style, tradition and personality.
·Fires: In and around the month of May, Tàrrega (L’Urgell - Lands of Lleida) will host Firacóc, the Aplec del Cóc and the Mostra de Productes de Fleca. At these fairs, visitors can discover more about how coques de recapte are made and both they and cóc (another type of biscuit cake) will be on sale.
